A Recipe by Dr. Dick Dyer Here's an intriguing recipe for hash that uses no meat, but combines potatoes and kidney beans to create a savory and healthy hash. I say it's healthy because Dick's wife is a registered dietician specializing in cancer survivors--and she put the recipe on her web site as an example of excellent nutrition.

Dr. Dick's Lean and Mean Kidney Bean Hash
2 Tablespoons olive oil
1 medium onion, chopped
1/2 green pepper, chopped
1/2 red pepper, chopped
2 to 3 boiled potatoes, chilled and diced with skins still on
1 15-ounce can kidney beans
1/2 cup water
dash of salt
dash of pepper
dash of garlic powder
dash of Tabasco sauce
dash of Mrs. Dash seasoning
Heat the olive oil in a large frying pan. Saute the onion until it's soft. Add the green and red peppers and saute briefly.
Add the diced potatoes and mix well. Cook for 10 minutes, turning with a spatula every 2 minutes.
While the potato mixture cooks, rinse the beans well to remove the "goo," then mash 1/2 to 2/3 of the beans with a potato masher. Mix the beans into the mixture in the frying pan, add 1/2 cup water, and cover. Cook over medium heat for another 5 minutes.
Season to taste. Serve and enjoy.
This serves two or maybe just one very hungry person. (The first time Dick made it, his wife ate it all because she was VERY hungry and it was, as she said, "soooo good.")
Alternative Suggestion
For turkey hash, substitute diced turkey for the kidney beans. Or leave in the beans and just add turkey. Either way, it's a great way to use up left-over turkey.

My wife brought it home and I'm sold on it. The "Bean Main Dishes" section alone has 53 recipes. Recipes are short, simple, tasty, and don't use weird ingredients that you don't already have. And, while I'm excited about the bean recipes (the Sausage Bean Quickie will be the first one we try), the rest of the recipes also look wonderful.
