A Recipe by Richard Mann Oh my goodness; we're going to put enough spices into this lovely pot of beans to make it smell and taste so good no one could resist them.

Start with a pound of dry kidney beans, add a ham bone or some ham hocks, toss in a big batch of veggies and whole cabinet of spices (or so it seems), and let it all simmer in a crock pot all day or overnight. The smell will be so good, you'll wish it were cooking in the microwave instead of the slow cooker. When you finally get to eat it, tossing that handful of parsley and green onions on top will set it off perfectly.
You've got to try this. It is good.
Crock Pot Red Beans
1 16-ounce bag (dry) kidney beans
1 ham bone OR bone-in ham hock
1 large bell pepper, chopped
1 large onion, chopped
3 stalks celery, chopped (including leaves)
1 small carrot, finely chopped
1 Tablespoon Tabasco sauce
2 bay leaves
4 cloves garlic, crushed
1/4 teaspoon thyme
1/4 teaspoon sage
1/4 teaspoon marjoram
1 cup red wine (or broth)
water to cover all ingredients
3 Tablespoons garnish (chopped fresh parsley and green onions)
1 Tablespoon salt
1 teaspoon white pepper
1 teaspoon black pepper
1/2 teaspoon red pepper
Put everything except the garnish in the crock pot on low heat. Cook covered for 6-10 hours. Check liquid level, adding water if needed to cover the beans. If there is too much liquid, turn the heat on high and leave the pot uncovered for a few minutes.
Reduce heat for several more hours or until ready to serve. Beans should be very tender. Remove bones and bay leaves; add garnish before serving. Serve over rice with grilled or smoked sausage. May be frozen.
